Favorite Marinade of the Summer

Looking for a favorite grilled meat this summer? Look no further, as this sweet and tender balsamic marinated flank steak is an easy main course with star power. This is one of our very favorite marinades for flank steak, and we are willing to bet it will be for you too!

The Secret is in the Marinating

Flank steak is best marinated for 24 hours in the refrigerator.  However, if you are putting together a last minute meal and want to use this balsamic flank steak recipe, there is a way to marinate more quickly.  Sprinkle garlic salt and lemon juice all over the flank steak while you prepare the marinade, then let it rest in there at room temperature up to an hour.  This can help to start to tenderize the meat while you prepare the marinade.

Grilled Balsamic Flank Steak Marinade Ingredients

In our homes, balsamic vinegar is as much of a staple as olive oil.  You need both for this marinade.  In addition, you need lemon, Worcestershire sauce, dried oregano, garlic powder, onion powder, salt and pepper. Simply combine all ingredients in a small mixing bowl (or I end up using a pyrex measuring cup to measure out the oil and vinegar, then add all additional ingredients), and whisk together.

Trim your flank steak of any excess fat and put into a large ziplock or glass container.  Pour the marinade over the top and let marinate in the fridge over night or for best results, 24 hours.

Grilling your Balsamic Flank Steak

I would estimate grilling time to be about 12 – 15 minutes depending on the thickness of the meat and your preference (medium, medium rare, well done).  Because I prefer mine to be cooked medium to medium rare, I would usually grill this at a medium-high heat for 6-7 minutes per side.

The flank steak cut of meat is thin so it can grill at a little bit higher heat, but you need to monitor it to be sure it doesn’t catch on fire from the marinade or fat from the meat.

Other Helpful Hints and Serving Suggestions

  • This marinade is also great for marinating chicken breast or chicken thighs.
  • Remember: I recommend marinating this overnight when you have the time.  It will allow the meat to take on a richer flavor.
  • If the steak has been marinating overnight, take the steak out of the refrigerator 30 minutes to 1 hour before grilling.  This will allow the meat to get to a better internal temperature for grilling more evenly.
  • When grilling, sometimes I flip it every 3-4 minutes, so that each side gets a bit of a criss-cross grill mark and it is ensured to cook most evenly.

Balsamic Grilled Flank Steak

Description

A great marinade for a summer BBQ or winter savory meal.  Serve with roasted potatoes, baked potatoes, couscous, or rice.


Ingredients

Scale
  • 11.5 pounds flank steak
  • ¼ C extra virgin olive oil
  • ¼ C balsamic vinegar
  • Juice of 1 lemon
  • 2 tsp Worcestershire
  • 1tsp dried oregano
  • 34 cloves, minced
  • ½ tsp onion powder
  • 1 tsp salt
  • ¼ tsp ground black pepper

Instructions

  1. Mix all ingredients in a small mixing bowl (or I end up using a pyrex measuring cup to measure out the oil and vinegar, then add all additional ingredients), and whisk to mix together.
  2. Trim any excess fat off of the steak.
  3. Place in a shallow dish or a food storage bag for marinating.
  4. Pour marinade over the steak and turn the steak to coat.
  5. Marinate for 2 – 24 hours prior to grilling.  I recommend marinating this over night when you have the time.  It will allow the meat to take on a richer flavor.
  6. If the steak has been marinating overnight, take the steak out of the refrigerator 30 minutes to 1 hour before grilling.  This will allow the meat to get to a better internal temperature for grilling more evenly.
  7. When ready for grilling, turn grill to medium-high heat.
  8. When the grill is hot, put the steak on the grill and grill for 5-7 minutes per side. Generally, 5 – 7 minutes will be medium-rare inside.  For more well done, monitor additional grilling time.

  • This marinade is also great for marinading chicken breast or chicken thighs.
