What About Those Old Bananas?
Do you get excited about over-ripe bananas like we do? Once I see them browning, I know there will be requests from my son and husband to make banana bread within the day. It does feel good not to waste them, so it is a pretty regular routine we have.
Banana Bread Ingredients
First, melt your butter. Then preheat your oven 350° before you begin. You will also want to grease (butter or cooking spray works fine) a 9X5 inch loaf pan.
This particular banana bread recipe evolved from many recipes over the years, but specifically is without nuts. It is not as dense as other banana breads because of the omission of nuts and because of the inclusion of sour cream. The addition of cinnamon also adds a nuanced flavor that you don’t often find in other banana breads, and it definitely distinguishes it.
Banana Bread Process
Next, blend the butter and sugar together until combined. Then, add your eggs and vanilla, mixing well as you add. In a separate bowl, blend the dry ingredients together with a wire whisk (flour, baking soda, cinnamon and salt).
Now add the dry ingredients into the butter/ sugar/ egg/ vanilla mixture until blended.
Next you can mash your bananas to the desired consistency (some like chunks of banana in their bread, whereas we tend to mash ours up to a more even consistency).
Then you can fold bananas and sour cream into the other ingredients until blended.
Lastly, bake for 40-50 minutes (depending on your oven). The top should be firm and lightly browned.

- 1 tsp vanilla
- 1 ½ c flour
- 1 tsp baking soda
- ½ tsp cinnamon
- ½ tsp salt
- ½ c sour cream
- 2 medium, over ripe bananas, smashed
Instructions
- Preheat oven 350° and grease a 9X5 inch loaf pan
- Melt butter in microwave
- Combine butter and sugar in a medium mixing bowl
- Add eggs and vanilla, mix well
- In separate bowl, blend flour, baking soda, cinnamon and salt
- Stir flour mixture into butter/ sugar
- Mash your bananas in a separate bowl
- Fold sour cream and bananas into the other ingredients
- Pour into prepared pan and bake 40-50 minutes. It is done when top is brown and toothpick comes out clean.
- **I cover mine with foil for the last 15 min. to avoid over browning the top.
Notes
You obviously can add walnuts (1/2 c chopped), but my son prefers it without!
