Light and Savory Appetizer

We love this prosciutto and cheese wrapped asparagus appetizer for a happy hour with friends and family.  It is delicious yet easy to make, not to mention has great visual appeal.  The savory rich flavor of the cheese and prosciutto is balanced by the lightness and crunch of the fresh asparagus. This appetizer is easily on our top 10 favorite appetizer list.

Ingredients for the Prosciutto Cheese Wrapped Asparagus

This is a short and simple list. You’ll need one bunch of fresh asparagus. Try to find asparagus of medium thickness.  Too thin or too thick of stalks will not look or taste as good. Then you’ll need 4 ounces of thinly sliced prosciutto, prepackaged or sliced from the deli.  And lastly, you’ll need 4 ounces of spreadable, flavored cheese like Alouette or Boursin.

 

How to Prepare This Appetizer

Preheat oven to 425°.

First, you trim the stalk end off of your asparagus. Then, place the spears in about 1/2 inch of water inside a sauté pan. Boil them for one minute. Take out of the water immediately and set aside on a paper towel, plate, or cutting board to cool. Meanwhile, cut your sliced prosciutto in half, lengthwise.  This is not an exact science, so you don’t need to get too meticulous. You will be wrapping it around the asparagus so perfection at this point is unnecessary!  Next spread cheese on one side of the prosciutto, dividing the cheese among all of the slices. After this, wrap each cooled spear with one prosciutto slice, cheese side in.

Line a baking sheet with foil and arrange the wrapped asparagus on the pan, without asparagus spears touching.  Bake in the preheated oven for 10 min or until the prosciutto looks lightly crisp.

Extra Tips

  • You can prepare the spears, wrapped in cheese and prosciutto ahead of time and then bake right before serving.
  • This appetizer is a great compliment to a steak dinner.

Ingredients

  • 1/2 bunch of asparagus spears (about 20), washed and trimmed
  • 4 oz thinly sliced prosciutto
  • 4 oz Boursin or Alouette Cheese (garlic and herb flavor)

Instructions

  1. Boil asparagus in sauté pan for 1 min.
  2. Cool on plate or cutting board.
  3. Cut slices of prosciutto in half, lengthwise.
  4. Spread cheese on the prosciutto.
  5. Wrap each spear with the prosciutto slice, cheese side in.
  6. Line baking sheet with foil, and arrange asparagus on the sheet without touching.
  7. Bake in preheated oven at 425° for 10 min or until the prosciutto looks lightly crisp.

Notes

  • Can prepare ahead of time and bake right before you’d like to serve.
  • Prep Time: 15 min
  • Cook Time: 10 min
