If you need an easy weeknight family crowd pleaser, try this honey mustard chicken thigh marinade.  The meat is tender and flavorful, pairing well with many types of sides.  We prefer the thighs to be grilled, but you do you, as the baked version is delicious as well. Also, my husband prefers chicken breasts, so often, I cut thicker breast meat into small cutlets in addition to the thighs to make everyone happy!

Honey Mustard Marinade Ingredients

Honey mustard chicken thigh ingredients: soy sauce, honey, dijon mustard, olive oil, salt, pepper, brown sugar, a head of garlic, and optional fresh thyme

You will need at least 6 boneless chicken thighs, and as mentioned, I often add in a few chicken breast cutlets. In addition, you will need olive oil, low sodium soy sauce, dijon mustard, honey, light brown sugar, fresh pressed garlic, salt and fresh ground pepper.  Fresh thyme is also a great addition if you have it, approximately 2 tsp.

 

The Quick How To

Mix all of the ingredients, aside from chicken, in a glass pyrex container.  Trim the thighs (and slice breasts into cutlets, if using).  Add the chicken to the pyrex and stir to coat the meat in the marinade.  Allow to marinate for at least 1 hour in the fridge, or up to 24 hours.

Then, heat up your grill to medium.  (If you are new to grilling, be sure to check out our post on 7 Grilling Tips for Beginners for some advice). Grill thighs about 3-4 minutes per side, looking for the nice grill marks before flipping, keeping your grill to a temperature of about 350-400 degrees, monitoring closely.

As mentioned, these thighs work with any of your favorite side recipes.  If you are trying to keep it easy, consider Roasted Brussel Sprouts and potatoes done your family’s favorite way.  Or you can grill up these thighs and serve on top of any of your favorite salads.  It goes well with our Kale Bacon Avocado Salad or something as simple as the Summer Spinach Salad.

  • Salt (to taste)

  • Optional: Fresh thyme leaves

Notes

  • If your family prefers chicken breast meat, you can trim breasts into cutlets and follow the instructions for the thighs
  • You could also bake these on a foil lined baking sheet in the oven at 425 degrees for about 12 minutes (or until measuring 165 degrees internal temperature)
