Want to add another go to tasty breakfast recipe into the rotation?  Mix things up by trying this quick and easy recipe for what our stepmom calls the breakfast quesadilla. My son, who rarely can muscle down eggs of any style in the morning, gobbled these right up when she made them at our house recently.   Serve plain or enjoy with your choice of toppings!  This is a kid and overall crowd pleaser.

You likely already have the basics for this breakfast quesadilla.  All you actually need is a bit of water, a flour tortilla, one egg, and about 2/3 cups of shredded cheese.  If you want to add more fillings or toppings, you could also use any type of breakfast style meats (sausage, bacon, ham) and/ or sautéed veggies of your choosing. Toppings to consider would be your favorite fresh salsa, sour cream, and/ or avocado.

The How To

I have to admit I was intimidated to try making these when I read Carolyn’s recipe.  There is a flipping element involved that seems like it would take some practice.  It took her visiting and showing me in the moment to understand that the tortilla actually holds all of the egg together, so it is a little easier than expected to manipulate in the pan.

First, you warm a medium sized skillet (should match the size of your tortilla pretty closely, and I use the 8″ flour tortillas) over medium heat.  Then coat the pan with cooking spray.  Use a shallow bowl or pie dish, and then add enough water to cover the bottom of the dish/ bowl.  Next, beat one egg in a bowl and set aside.  At this point, dip your tortilla on both sides in the water, just enough to wet it.  Now, you put that wet tortilla in your warm skillet.

Then, pour half of the beaten egg on the tortilla.  Use a pastry brush to spread the egg around evenly on the tortilla.  Next,  sprinkle 1/3 cup of shredded cheese on top of the egg.   Cook this until the egg is done and the cheese begins to melt, about 2-3  minutes.  Flip the whole thing over in the pan.  Now you can pour the remaining half of beaten egg on the tortilla, and then spread it with the pastry brush.  Now sprinkle the remaining 1/3 cup of shredded cheese.  ***At this point you could add extra fillings like sausage, ham, bacon, sautéed veggies, etc.). Cook this for 2-3 minutes and then fold two sides of the tortilla toward the center.  Finally, you will flip this one more time to cook for about one minute.

Lastly, transfer the quesadilla to a cutting board and slice into strips.  Serve as is and it is delicious!  Or add salsa, sour cream, and/ or avocado on top.

Extra Tips

  • Get creative and add whatever fillings or toppings are family preference.  Plain and basic is how my kids enjoy it the most, but my husband and I do enjoy salsa and avocado.
  • If you do not have an exact tortilla and pan size match, don’t worry.  Egg may spill over the sides of the tortilla when cooking if you skillet is too large, but it’s no big deal.  Just fold the egg in once it is cooked to clean up the edges or don’t worry about it at all.

Ingredients

Scale
  • Medium size flour tortilla (8 inch)
  • 1 egg
  • 2/3 cup shredded cheese
  • ¼ c water
  • Cooking spray
  • Optional additional fillings: sausage, ham, sautéed vegetables
  • Optional toppings: salsa, sour cream, avocado

Instructions

  1. Heat a medium sized skillet (to match size of your tortilla); coat with olive oil or regular cooking spray
  2. Pour the water into a shallow bowl or pie dish. Dip the flour tortilla in the water to quickly wet it on both sides.
  3. Put the tortilla in the warm skillet.
  4. Beat the egg in a small bowl.
  5. Pour half of the beaten egg on top of the tortilla. Use a pastry brush to spread the egg around evenly on the tortilla.  Sprinkle 1/3 of the cheese on top of the egg.
  6. Allow to cook at medium heat until egg is done and cheese begins to melt, about 2-3 minutes
  7. Flip the tortilla over.
  8. Pour the rest of the beaten egg on the tortilla and spread around evenly with the pastry brush.
  9. Add the remaining 1/3 c cheese to the top
  10. At this point, you could add other ingredients, such as ham, sausage, sautéed veggies, etc.
  11. Cook 2-3 minutes
  12. Fold two edges up to the center and flip one more time to cook for another minute.
  13. Use spatula to transfer to a cutting board. Use a pizza cutter to slice it into strips.
  14. Serve plain (kid preferred) or with salsa, sour cream, and/ or avocado on top.
