Carolyn’s Breakfast Quesadilla

Description

Easy and delicious breakfast that all will enjoy.


Ingredients

Scale
  • Medium size flour tortilla (8 inch)
  • 1 egg
  • 2/3 cup shredded cheese
  • ¼ c water
  • Cooking spray
  • Optional additional fillings: sausage, ham, sautéed vegetables
  • Optional toppings: salsa, sour cream, avocado

Instructions

  1. Heat a medium sized skillet (to match size of your tortilla); coat with olive oil or regular cooking spray
  2. Pour the water into a shallow bowl or pie dish. Dip the flour tortilla in the water to quickly wet it on both sides.
  3. Put the tortilla in the warm skillet.
  4. Beat the egg in a small bowl.
  5. Pour half of the beaten egg on top of the tortilla. Use a pastry brush to spread the egg around evenly on the tortilla.  Sprinkle 1/3 of the cheese on top of the egg.
  6. Allow to cook at medium heat until egg is done and cheese begins to melt, about 2-3 minutes
  7. Flip the tortilla over.
  8. Pour the rest of the beaten egg on the tortilla and spread around evenly with the pastry brush.
  9. Add the remaining 1/3 c cheese to the top
  10. At this point, you could add other ingredients, such as ham, sausage, sautéed veggies, etc.
  11. Cook 2-3 minutes
  12. Fold two edges up to the center and flip one more time to cook for another minute.
  13. Use spatula to transfer to a cutting board. Use a pizza cutter to slice it into strips.
  14. Serve plain (kid preferred) or with salsa, sour cream, and/ or avocado on top.

Notes

  • Get creative and add whatever fillings or toppings are family preference.  Plain and basic is how my kids enjoy it the most, but my husband and I do enjoy salsa and avocado.
  • If you do not have an exact tortilla and pan size match, don’t worry.  Egg may spill over the sides of the tortilla when cooking if you skillet is too large, but its no big deal.  Just fold the egg in once it is cooked to clean up the edges or don’t worry about it at all.
