If you need a reliable tasty, starchy side, these roasted mini potatoes are a go to.  This is a versatile side dish, fit for your regular family dinner rotation and/ or served alongside steaks or pork when having guests. We like using a variety of potatoes for this recipe, although you could certainly just stick to the petite red or gold potatoes if you prefer those.

This recipe is for about a 2 lb bag of mini potatoes.  You’ll only need a variety of dried or fresh spices (thyme, oregano, rosemary), onion powder, fresh garlic and olive oil.  Simple!

 

 

The Simple How To

This recipe is very easy.  First, preheat your oven to 425 degrees Fahrenheit. Next, wash the potatoes and then cut into bite sized pieces.   Place in a medium mixing bowl and then add the remaining ingredients.

Stir well to coat the potatoes with the olive oil and spices.  Pour them out onto an aluminum baking sheet in a single layer. Then you will roast them for 15 minutes before tossing/ flipping them with a spatula.  Then roast them for 15 minutes more. Check on them a few times if it is your first time, but after 30 minutes they should be crispy on the outside and soft on the inside!

Serving and Substitution Suggestions

You can serve these alongside just about any protein, but we prefer it with steak or pork.  The herbs/ spices are suggestions, but you can definitely make these your own and vary them up depending on what you have.  When I have fresh herbs, I always prefer to use those, but the dried spices work well also.  Just remember that you’ll need more fresh herbs than dried, as dried have more concentrated flavor.

Instructions

  6. Cook at 425.  After 15 minutes, stir and flip the potatoes and then roast them for another 15 minutes.

Notes
