Roasted Mini Potatoes

Description

Easy and tasty starchy side, perfect for any occasion.


Ingredients

Scale
  • 2 lbs. mini potato medley
  • 3 T olive oil
  • ½ tsp dried thyme
  • ½ tsp dried oregano
  • ½ tsp dried rosemary
  • ½ tsp onion powder
  • ½ tsp sea salt or pink Himalayan salt
  • 2 cloves garlic, pressed

Instructions

  1. First, preheat your oven to 425 degrees Fahrenheit.
  2. Next, wash the potatoes and then cut into bite sized pieces.
  3. Place in a medium mixing bowl and then add the remaining ingredients.
  4. Stir well to coat the potatoes with the olive oil and spices.
  5. Pour them out onto an aluminum baking sheet in a single layer.
  6. Cook at 425.  After 15 minutes, stir and flip the potatoes and then roast them for another 15 minutes.

Notes

  • You can serve these alongside just about any protein, but we prefer it with steak or pork.
  • The herbs/ spices are suggestions, but you can definitely make these your own and vary them up depending on what you have.  When I have fresh herbs, I always prefer to use those, but the dried spices work well also.
