What has fresh ingredients, is easy to make and a is definite crowd pleaser?  This fresh and easy guacamole!  We affectionately refer to this recipe as “guacamole by feel” in our family.  Although we will provide you measurements here, we never use those when making it ourselves. Whoever is making it, usually my husband or son, adds ingredients gradually and asks for taste testers along the way.  It took some doing nailing down the specifics for this post, as you can imagine.

The Ingredients

Guacamole ingredients: 3 avocados, pico de gallo in a bowl, 2 limes, cilantro, and salt & pepper grinders

First of all, find 3-4 perfectly ripe medium sized avocados if you are making guacamole the day of serving and enjoying.  You will also need chopped fresh tomato, white onion, jalapeño, and cilantro (or purchase pre-made pico de gallo in your grocery store’s produce department).  Also, you will need fresh lime juice, salt and pepper.  Find your favorite tortilla chips as well.

 

Making this Fresh and Easy Guacamole Happen

First, peel and remove pits from the ripe avocados, and mash them in a medium bowl.  Next, seed and dice one small tomato.  Then, dice about 3 tablespoons white onion, 1/4 jalapeño (about 2 T), and 2 tablespoons fresh cilantro. To make this simpler, you could also buy pre-made pico de gallo and use about 3/4 cup instead of chopping those veggies.  At this point, you can fold the chopped tomato, onion, jalapeño and cilantro into the mashed avocados.  Add juice from one lime, 1/2 tsp salt, and 1/4 tsp ground pepper.   Most importantly, taste along the way and adjust to your preference. You can always add more or less tomato, onion, and jalapeño to your tastes. This guacamole is only as good as the chef is attuned to his audience!

Once it is assembled, put the guac in the fridge to chill for at least 30 minutes prior to serving, for best results.

We literally eat guacamole once a week, at least. So, serve whenever! Great for unexpected happy hours (so keep ingredients stocked, especially in summer and football season) and a great snack for hungry baseball boys after a tournament day.

Add and subtract as YOU like for this recipe. We think the ingredients make it easy and we adjust constantly to find the right balance of chopped veggies to avocado.

  • 1 Roma tomato, seeded and diced (about 1/2 cup)
  • 2 T finely diced jalapeño
  • Juice from 1 lime
  • salt and pepper to taste

Instructions
