- 3–4 ripe avocados
- 2 T chopped cilantro
- 3 T chopped white onion
- 1 Roma tomato, seeded and diced (about 1/2 cup)
- 2 T finely diced jalapeño
- Juice from 1 lime
- salt and pepper to taste
Instructions
- First, peel and remove pits from the ripe avocados, and mash them in a medium bowl.
- Next, seed and dice one small Roma tomato, dice 3 tablespoons white onion, seed and finely dice 2 tablespoons jalapeño, and 2 tablespoons fresh cilantro (or use 3/4 cup pre-made pico de gallo).
- At this point, you can fold the chopped tomato, onion, jalapeño and cilantro into the mashed avocados.
- Add juice from one lime, 1/2 tsp salt, and 1/4 tsp ground pepper.
- Most importantly, taste along the way and adjust to your preference. You can always add more or less tomato, onion, and jalapeño to your tastes. This guacamole is only as good as the chef is attuned to his audience!
