Description
Serve with your favorite pasta dish or when you order out for pizza! Tossed with a homemade vinaigrette, the flavor is a perfect complement to any main dish, and especially if you are cooking Italian style.

For the Dressing:
- 2 T Dijon mustard
- 2 T honey
- 2 T olive oil
- 2 T apple cider vinegar
- 1/4 tsp black pepper
- 1/4 tsp salt
For the Salad:
- 5 ounces mixed greens
- 1/4 red onion, thinly sliced
- 2 ounces diced pancetta, crisped
- 1 cup halved cherry tomatoes
- 1/2 cup grated Parmesan cheese
Instructions
- First, measure and shake the dressing ingredients up in a tightly sealed mason jar and set aside.
- Take the 2 ounces of diced pancetta, and crisp it in a small sauté pan.
- When done, set aside on a plate lined with a paper towel.
- Then, select your serving bowl, and fill with the washed and dried mixed greens.
- Wash and halve the cherry tomatoes, then sprinkle on top of the greens.
- Next, thinly slice the red onion and scatter on the top of the greens.
- Add the cooled, diced pancetta to the salad bowl.
- Now you are ready to toss in the dressing. Add a little at a time, to monitor desired amount.
- Top with freshly grated parmesan cheese and enjoy!
Notes
- Don’t be afraid to mix up the cheese selection that you top this salad with!
- Any Italian themed hard cheese works well, and also halved mozzarella balls are an awesome variation.
- Add sliced Kalamata olives, if the ones dining are fans.
- Another great substitution is to quarter some salami slices to toss in if you do not want to add the step of crisping the pancetta.
