Try this cucumber medley salad with lemon garlic vinaigrette, as it is a great complement to any main dish.  An easy, fresh tasting side that is different than your typical side salad.  I love using this salad with any grilled meat, including chicken, fish, or steak.

Cucumber Medley Salad Ingredients

For this salad, you will need cucumber, Roma tomatoes, red onion, avocado, and feta cheese.  The dressing ingredients include fresh garlic, olive oil, white wine vinegar, fresh lemon juice, salt and pepper.

First wash and chop tomatoes, cucumber (peeled), onion, avocado and put all in a medium sized salad bowl.  Then, mix the dressing separately by adding all ingredients to a small bowl and whisk together until the dressing forms.  Pour over the salad a bit at a time to your desired amount of dressing.  (If you have leftovers, reserve the rest and use for any salad over the next 3-4 days).  Lastly, garnish with desired amount of feta cheese.

When to Make this Cucumber Medley Salad

You can easily use this salad on top of a greek chicken bowl.   When it’s a busy school night, I look for ways to make a quick meal.  I often default to a grilled meat and veggie, but often get bored of the same quick salad or vegetable, so this is a good change up to that.  And you can really make it differently every time based on whatever vegetables you have on-hand.

Ingredients

For the salad:

  • 1/2 cucumber, diced
  • 2 Roma (or similar) tomatoes, diced
  • 1 1/2 avocado, cut into chunks
  • 1/4 red onion, finely diced
  • 1/81/4 cup feta cheese

For the dressing:

  • 1 clove garlic pressed
  • 1/4 cup olive oil
  • 3 TBS white wine vinegar
  • salt and pepper to taste
  • 1/2 lemon
