Ingredients

For the salad:
- 1/2 cucumber, diced
- 2 Roma (or similar) tomatoes, diced
- 1 1/2 avocado, cut into chunks
- 1/4 red onion, finely diced
- 1/8 – 1/4 cup feta cheese
For the dressing:
- 1 clove garlic pressed
- 1/4 cup olive oil
- 3 TBS white wine vinegar
- salt and pepper to taste
- 1/2 lemon
Instructions
- Chop tomatoes, cucumber, onion, avocado and put all in a medium sized salad bowl.
- Mix the dressing separately by adding all ingredients to a small bowl and whisk together until the dressing forms.
- Pour over the salad to desired amount of dressing. (If you have leftovers, reserve the rest and use for any salad over the next 3-4 days).
- Garnish with feta cheese
