This Mushroom Chicken is a cherished recipe from my husband’s family, originally created by his grandmother decades ago. The coziest of comfort foods which has many fond memories of family gatherings surrounding it. So special, that for years has been the chosen Christmas Eve dinner in the Mastain family. We love enjoying this creamy, tender chicken on any cold fall or winter day and smelling it cook slowly in the oven for hours during a snow storm is priceless! This is a recipe we predict will continue to be passed down for years to come. We hope you find it as special as we do.
The Mushroom Chicken Ingredients
This recipe is genius because it is simple and delicious. All you will need is 4-6 chicken breasts, cream of mushroom soup, a dry inexpensive white wine, and sour cream.
How to Prepare this Mushroom Chicken
First, set your oven to 350 degrees. Then rinse and trim the fat off of the chicken breasts. Now, place them in a large, rectangular baking dish in a single layer.
Next, in a large mixing bowl, combine cream of mushroom chicken soup, sour cream, and white wine. Whisk to combine thoroughly. Then, pour the mixture on top of the chicken breasts in the baking pan, to cover the chicken completely.
Now you can bake it in the oven for 2-2 1/2 hours, until chicken is cooked through and tender. The top will be golden brown.
Notes and Serving Suggestions
- This chicken is so tender you can cut it with a fork!
- We have provided measurements in this recipe, however, in actuality no one in the family measures exactly, so there is a lot of room for adjusting to your preferences and amounts.
- For example, you could also cook this chicken at 325 for 3-3 1/2 hours if you want a later dinner time.
- In addition, you can use more chicken breasts and add slightly more of the sauce ingredients, with ease.
- Serve with a side of mashed potatoes and top them with the gravy from the chicken as well!
