Description
This is a fresh, flavorful marinated shrimp appetizer fit for most any occasion or season. We love making this for a happy hour with friends or as an appetizer before a celebration dinner.

- 2 1/2 lbs of cooked, peeled and deveined shrimp
For the mustard vinaigrette
- 1/4 C fresh parsley
- 1/4 C diced shallots
- 1/4 C tarragon vinegar
- 1/4 C white wine vinegar
- 1/2 C olive oil
- 4–5 T Dijon mustard
- 1/2 T red pepper flakes
- 1/2 tsp salt
- fresh ground pepper to taste
Instructions
- We like to purchase precooked (frozen or fresh) and deveined shrimp, as this makes this appetizer simple to make. If you purchase frozen shrimp, defrost the shrimp overnight in the refrigerator.
- Now, rinse the shrimp in a colander and allow to drain while you prepare the mustard vinaigrette marinade.
- Wash and chop fresh parsley.
- Peel and dice the shallots.
- To make the marinade, in a small bowl, combine all of the vinaigrette ingredients with a whisk.
- Next, put the drained, cooked, deveined and shelled shrimp (you can leave tails on or remove them) in medium sized glass container.
- Then pour the marinade over the shrimp, cover and refrigerate for 2 hours or overnight.
- Serve over a bed of lettuce or on a serving platter with toothpicks.
Notes
- This recipe has a short prep time but should marinate for 2 hours at least for best results!
- On occasion, we have struggled to find tarragon vinegar in the grocery store. When this is the case, you can soak some fresh tarragon leaves in white wine vinegar for a few hours, then remove the tarragon leaves then use the vinegar in place of the tarragon vinegar.
