Melted Brie with Toasted Almonds & Cranberries

Description

This melted Brie with toasted almonds & cranberries is a favorite holiday appetizer and has been for many years.   It is full of flavor, and actually super simple to make.


Ingredients

  • 1 small wheel of Brie (usually 8 oz) –  exterior thinly sliced off for melting
  • 1/4 cup slivered almonds, toasted
  • 1/4 cup dried cranberries
  • 1 T or honey or fig jam
  • crackers or sliced baguette to serve

 


Instructions

  1. Preheat oven to 350°.
  2. Start by toasting the almonds.  Turn the stove to medium low, heating a small nonstick skillet.  Add slivered almonds to the pan and heat them slowly as you stir them occasionally, until they are lightly toasted.  When they are finished, set them aside on a plate.
  3. Unwrap the wheel of Brie ,and trim the rind off of the brie.  Although trimming the rind is optional, I think it allows for better melting.
  4. Place the wheel of Brie in a small oven safe dish, or a 5 inch iron skillet works great as well.  Keep in mind that the larger the dish, the more the Brie will spread out as it melts.
  5. Lay cranberries on top of the Brie.  Drizzle honey on the cranberries as evenly, however, it will spread out nicely as the Brie melts.
  6. Put this in the oven for about 10 minutes, or when the Brie is almost melted through.
  7. Then, add the toasted almonds on top of the Brie and cranberries.   Continue cooking for another 5 minutes.
  8. Everything should look melty and ready to eat.  Remove it from the oven and serve warm with your favorite crackers or a sliced baguette. Enjoy!

Notes

  • You can substitute fig jam for the honey.  If you do this, just mix the dried cranberries with 1-2 Tablespoons of fig jam before spreading on top of the Brie, prior to baking.
