Mixed Berry Cobbler

Ingredients

  • 3 1/2 cups of fresh berries
  • 2 cups sugar
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 eggs
  • 1 teaspoon of almond extract
  • juice from onehalf of a large lemon
  • 8 tablespoons of melted butter

Instructions

  1. Preheat the oven to 425°.
  2. First, prepare the berries by washing them in a colander.  If you are using strawberries, you can cut the stems off and quarter them.  Measure out your berry mix to be about 3 1/2 cups total. Put the berries in a mixing bowl and add almond extract and lemon juice.  Stir to combine and set aside.
  3. Next, using a whisk, combine sugar, flour, salt, and cinnamon in a mixing bowl.  Then add the eggs and blend into the dry mixture with a fork.  This will yield a thicker powder texture with some small chunks.
  4. Now, with nonstick spray, prepare a medium-sized baking dish (I use my 10.5 X7.5 Staub).  Pour the berries into the dish.
  5. Evenly distribute the crust mixture on top of the berries, reserving about 1/2 cup.
  6. Next, melt the butter in the microwave.  Then drizzle it evenly over the top of the cobbler crust.  Butter will pool in spaces, so you will sprinkle the remaining crust mixture on top of those buttery spaces.
  7. Bake at 425° for 25-35 minutes or until golden and bubbly on top.
  8. Remove from the oven and let stand for about 5 minutes.
  9. Use a large serving spoon to scoop a serving of cobbler into a bowl and add a scoop of vanilla ice cream on top. Serve and enjoy.

Notes

  • If you want to bring this dessert to a casual dinner party, you can prepare part of it beforehand and then easily throw it together at the event. Simply wash and drain the berries (cut strawberries if using), and then place them in a mixing bowl or container with a lid.  You can add the almond extract at that point and stir.  Mix dry ingredients and store in a large ziplock or mixing bowl/ container with a lid.  Bring along your baking dish, the lemon, eggs, butter, and ice cream. Prepare and put the cobbler in the oven at your host’s home right after dinner.
