If you love Italian cuisine like we do, this Bruschetta Chicken Sandwich is a great recipe for the dinner rotation. This sandwich has all the fresh garden and savory flavors of a bruschetta appetizer and is served on top of a moist grilled chicken breast. It is an appetizer turned main course that we enjoy during the warm spring and summer months.
Bruschetta Chicken Sandwich Ingredients
For this recipe, you will need 2 chicken breasts, ingredients for a fresh bruschetta, buns (or your favorite French bread), and 1/2- 3/4 cup shredded mozzarella. The finishing touch to this sandwich is a balsamic glaze. You can purchase this in the grocery store near the olive oil and vinegar section.
For the Bruschetta
I like to make bruschetta out of two fresh Roma tomatoes, 2-3 T basil, olive oil, garlic, salt, and pepper. Or you could purchase your favorite premade bruschetta from the market.
How to Make This Bruschetta Chicken Sandwich
First, decide how you want to marinate your chicken. We recommend this Simple & Delicious Chicken Marinade . Prepare the chicken breasts by trimming any fat and then rinsing them. Pat them dry and slice lengthwise, on a diagonal, creating two smaller pieces with even thickness out of each breast. Do this with both chicken breasts; you will have 4 roughly evenly-sized pieces. Marinate them for 30 minutes to 2 hours ahead of time.
Next, prepare the fresh bruschetta. Chop 2 Roma tomatoes into a small dice. Wash and pat the basil dry. Julienne basil leaves to equal about 2 heaping tablespoons full. Peel and mince 2 cloves of garlic. Combine these ingredients in a small bowl and add 1 tablespoon olive oil. Add salt and pepper to taste. Now, set the bruschetta aside.
Heat your grill to medium heat and grill the marinated breasts, for about 4-5 minutes per side, depending on the thickness of the breasts. The internal temperature of the chicken should be 165° when done. If you are new to grilling, see this post on Grilling for Beginners for some tips.
While grilling the breasts, you can prepare the buns (or pieces of bread) by slicing them and placing the bottom halves on a baking sheet a few inches apart. Next, heat the oven to 400°.
When each breast is finished grilling, place it on each bottom bun. Then add 2 spoonfuls of bruschetta to the top of each breast. Sprinkle the desired amount of mozzarella on top of each pile of bruschetta.
Bake in the oven for approximately 5 minutes, or until cheese is melted. Remove the baking sheet from the oven, drizzle balsamic glaze on top, and top with the other side of the bun.
Tips for the Bruschetta Chicken Sandwich
- My favorite bread to use for this sandwich is thickly sliced French bread. Ciabatta buns are also a delicious choice.
- You can also toast your bread or buns before assembling the sandwiches and melting the cheese in the oven. An easy way to do this would be to brush olive oil onto the inner sides of the bun or bread and lightly grill them while grilling the chicken. Another option is to serve this without bread or bun at all.
- A few sides that would pair well with this chicken sandwich include any roasted vegetable, such as this Roasted Asparagus with Pancetta or this Simple Roasted Broccoli.
Kid Tip: Slice breasts into smaller pieces and serve on Hawaiian rolls for the tiny tummies in your house. Allow the kids to add the bruschetta on top or on the side. Same with the cheese.
