Description
These creamy crock pot pork chops are a family favorite. It is an easy, savory meal, perfect for fall and winter days and for busy weeknights.
Ingredients

- 4 large, thick-cut bone-in or boneless pork chops
- 1 tsp smoked paprika (divided to season each pork chop)
- 1 tsp dried oregano
- salt and pepper to taste
- 1–2 T olive oil
- 1/2 large onion, thinly sliced
- 8 ounces mushrooms, sliced
- 2 cloves whole garlic, peeled
- 1 can cream of mushroom soup (10.5 oz)
- 1 can cream of chicken soup (10.5 oz)
- 1 can beef stock (10.5 oz or more is fine)
Instructions
- First, clean and slice the mushrooms and onion. Place these in the bottom of the crock pot.
- Next, heat one tablespoon of olive oil in a large skillet. Season the chops on both sides with salt, pepper, smoked paprika, and dried oregano.
- Brown each side of the pork chops in the skillet (about 2-3 min per side), adding more oil if needed during the process. Place the browned pork chops on top of the mushrooms and onions in the slow cooker.
- Peel 2 cloves of garlic and add to the crock pot.
- Add the cream of mushroom, cream of chicken, and beef stock to the warm skillet. Use a rubber whisk to mix the soups, stock, and remaining pork bits into a sauce. Stir these together over low heat until combined.
- Pour the sauce over the top of the pork chops, mushrooms, and onions in the crock pot. Cook on low for 6-7 hours.
- Serve over the top of mashed potatoes or egg noodles.
