The BBQ Chicken Flatbread Pizza Ingredients
First, select your preferred flatbread or pita bread. You can make the pizzas in a variety of sizes, depending on the flatbread you choose. This recipe is for one personal-size pizza, which could be shared as an app or “not shared” for a meal!
You will also need a small amount of your favorite barbecue sauce, mozzarella and parmesan cheeses, shallots (or red onions), cilantro, and chunks of chicken breast. I prefer using pickled shallots, which is easy to do! It adds an extra sweet, tangy flavor that complements the barbecue sauce well.
- How to make pickled shallots: Peel the outer dry skin off of one medium shallot. Then, slice it EXTRA thin. Dissolve 1 tsp of white sugar in about 1/4 cup of red wine vinegar in a small jar or bowl. Soak the shallots (make sure they are covered by the vinegar mixture) for about 20 min. Drain out the liquid and there you have it.
The Chicken:
To make this BBQ chicken pizza in the absolute easiest way, you could buy pre-cooked chicken chunks. Costco sells some small, individually packaged portions of cooked chicken breast chunks which are perfect. We have these stocked to make quick healthy lunches, like salads and wraps.
Alternatively, you could use leftover cooked chicken from a previous meal or rotisserie chicken.
How to Assemble and Make this Easy Flatbread Pizza
If using pickled shallots, prepare those and let them marinate while the oven is heating and you are setting up your flatbreads. Preheat your oven to 425°. Wash, destem, and pat dry cilantro leaves (about 2 T or 12-15 leaves).
Prepare your pizza by spreading 2-3 tablespoons of your favorite barbecue sauce on the flatbread or pita, except for about a 1/2″ around the outer perimeter of the surface. Sprinkle 1/4 cup shredded mozzarella cheese evenly on top of the sauce. Next, add small chunks of cooked chicken breast (about 2 oz total) evenly spread over the surface of the cheese.
Remove pickled shallots from the vinegar mixture and pat them dry a bit on a paper towel. Then you can add them evenly across the surface of the pizza. You may use about 1/2 of a small shallot total. (You can reserve the rest of your pickled shallot to add to a salad or another pizza later!) Sprinkle the cilantro leaves evenly across the pizza, and then finally 2-3 T grated parmesan cheese to the top.
Bake your flatbread pizza straight on the oven rack (for about 10 minutes) or on a pizza stone (for about 15 minutes), monitoring for the desired crispiness of crust and browning of cheese. Once you remove it from the oven, allow it to cool for 2-3 minutes at least on a cutting board before slicing it into pieces to serve.

- Red onions are a great substitution for using pickled shallots. Sautéing the onions before putting them on the pizza would be recommended.
