Nothing says summer like this fresh, crisp watermelon, mint, & feta salad.  Simple to make yet gorgeous visual appeal; this will be a side dish you serve at all of your backyard barbecues this season!

The Salad Ingredients

This salad is super simple and doesn’t even need a dressing.  Just these 3 ingredients create all of the flavor.   You will need 1 pound of watermelon cut into 1/2 inch cubes (about 2 cups), 1/2 cup regular full-fat feta cheese, and 1/4 cup of chopped fresh mint leaves.

How to Make this Watermelon, Mint, & Feta Salad

Cut the watermelon into 1/2 inch chunks, and place in a strainer to drain excess liquid from the watermelon.  Let it drain for 30 minutes to an hour before compiling the rest of the salad.

Rinse the mint leaves and pat them dry.  Next, chop the mint finely to prepare for the salad.

Make sure the feta is crumbled into smaller pieces as you prefer.

Once the watermelon is drained of most of the excess juice, add all ingredients to a bowl and stir.  Refrigerate for 20 minutes before serving.

Tips and Serving Suggestions

  • When making this salad, you’ll want to serve it fairly quickly after preparing it.  The watermelon and feta can get soggy if not served quickly.  If you are taking it to a gathering or summer BBQ, bringing ingredients in separate containers is best.  Combine the salad ingredients when you arrive or 20 minutes before serving, so there is time to chill it prior.
