Asparagus is a favorite veggie in our house, and this recipe for roasted asparagus with pancetta is one of our go-to side dishes. The pancetta adds so much flavor yet not any extra effort.
Roasted Asparagus with Pancetta Ingredients
This recipe is simple, and you only need 6 ingredients. First, shop for 1 lb. of fresh asparagus. I like to find asparagus that is medium thickness when I am planning to roast it. If it is too thick, it will be hard to reach optimal tenderness when roasting it and if it is too thin, it often turns out overdone. In addition to asparagus, you will need 2 cloves of fresh garlic, salt, pepper, and olive oil. For pancetta, my grocery store has it pre-chopped in 2 ounce packages which is ideal. You could purchase it sliced and do the chopping on your own, but a great time saver is to buy it already prepped.
How to Make this Roasted Asparagus with Pancetta
Preheat the oven to 425° and line a baking sheet with foil. Then rinse your asparagus and chop off the thick, woody ends (about 1/2 inch usually). You can mince the 2 T of garlic and set aside. Next, lay the asparagus across the baking sheet. It is ok if they overlap a bit. Drizzle with about 2 T olive oil. and sprinkle with salt and fresh ground pepper to taste. Take tongs and toss the asparagus with the olive oil, salt and pepper. Next, sprinkle the minced garlic on the asparagus and toss a bit more. Lastly, sprinkle 2 ounces of pancetta across the asparagus.
Roast for 15 minutes. They are ready if they are bright green and slightly tender. The pancetta should be a bit crispy at that point as well.
