If you need a quick and easy dessert, this mixed berry cobbler is perfect!  With a blend of your favorite seasonal fresh berries and a flavorful crust on top, you and your guests will love this sweet treat.  This cobbler is suited for summertime family gatherings, as it serves a small dinner group. Truth be told, I have never been a fruity dessert person.  However, I was introduced to a version of this cobbler by a dear friend and her sister who made it together.  Because it was a “sister thing” it piqued my interest.  So, thank you Kelli and Courtney for inspiring me to expand my dessert horizons.

Mixed Berry Cobbler Ingredients

a bowl of mixed berries ready to put into the cobblerFor this cobbler recipe, you will need 3 1/2 cups of fresh berries.  My favorite combination is primarily blueberries and then about 1 cup total of strawberries, blackberries, and raspberries.  I have made it with only blueberries and blackberries, and it was also delicious.

In addition, you will need 2 cups sugar, 2 cups flour, 1/2 teaspoon salt, 1 teaspoon cinnamon, 2 eggs, 1 teaspoon almond extract, juice from one half of a large lemon and 8 tablespoons of melted butter.

This cobbler is best served with a scoop of your favorite old-fashioned vanilla ice cream as well.

How to Make this Berry Cobbler

Preheat the oven to 425°.

First, prepare the berries by washing them in a colander.  If you are using strawberries, you can cut the stems off and quarter them.  Measure out your berry mix to be about 3 1/2 cups total. Put the berries in a mixing bowl and add almond extract and lemon juice.  Stir to combine and set aside.

Next, using a whisk, combine sugar, flour, salt, and cinnamon in a mixing bowl.  Then add the eggs and blend into the dry mixture with a fork.  This will yield a thicker powder texture with some small chunks.

Now, with nonstick spray, prepare a medium-sized baking dish (I use my 10.5 X7.5 Staub).  Pour the berries into the dish.  Evenly distribute the crush mixture on top of the berries, reserving about 1/2 cup.  Next, melt the butter in the microwave.  Then drizzle it evenly over the top of the cobbler crust.  Butter will pool in spaces, so you will sprinkle the remaining crust mixture on top of those buttery spaces.

Bake at 425° for 25-35 minutes or until golden and bubbly on top.  Remove from the oven and let stand for about 5 minutes.  Use a large serving spoon to scoop a serving of cobbler into a bowl and add a scoop of vanilla ice cream on top. Serve and enjoy.

  • This recipe came about because I used my favorite berries together.  Choose your favorites and try that!
  • If you want to bring this dessert to a casual dinner party, you can prepare part of it beforehand and then easily throw it together at the event. Simply wash and drain the berries (cut strawberries if using), and then place them in a mixing bowl or container with a lid.  You can add the almond extract at that point and stir.  Mix dry ingredients and store in a large ziplock or mixing bowl/ container with a lid.  Bring along your baking dish, the lemon, eggs, butter, and ice cream. Prepare and put the cobbler in the oven at your host’s home right after dinner.
