What You Need for These Crock Pot Pork Chops
I like to look for a package of thick-cut, bone-in, or boneless pork chops. Four large chops are sufficient for this recipe. Bone-in pork chops are very tender, however, the bones can separate from the meat while cooking and be hard to see. This tends to be more of a hassle when dishing out servings for kids.
Seasonings for this recipe include smoked paprika (you can substitute regular paprika), garlic cloves, dried oregano, salt and pepper. You will also need 8 ounces of mushrooms, cleaned and sliced, as well as 1/2 of a yellow onion, sliced. For the creamy sauce, you will need one can of cream of chicken soup, one can of cream of mushroom soup, and one can of beef stock.
How to Make These Creamy Pork Chops
First, clean and slice the mushrooms and onion. Place these in the bottom of the crock pot.
Next, heat one tablespoon of olive oil in a large skillet. Season the chops on both sides with salt, pepper, smoked paprika, and dried oregano. Brown each side of the pork chops in the skillet (about 2-3 min per side), adding more oil if needed during the process.
Place the browned pork chops on top of the mushrooms and onions in the slow cooker. Peel 2 cloves of garlic and add to the crock pot.
Add the cream of mushroom, cream of chicken, and beef stock to the warm skillet. Use a rubber whisk to mix the soups, stock, and remaining pork bits into a sauce. Stir these together over low heat until combined.
Pour the sauce over the top of the pork chops, mushrooms, and onions in the crock pot. Cook on low for 6-7 hours.
