For this salad, you will need Romaine lettuce, cooked bacon, garlic & herb Boursin cheese, cherry tomatoes, and freshly ground salt and pepper.  The simple dressing uses olive oil, red wine vinegar, and Dijon mustard.

How to Make this Bacon Boursin Salad

First, you will pre-cook 3 slices of bacon and set aside to cool.  While the bacon is cooking, you can rinse and pat the lettuce dry.  Chop and measure 3 cups of lettuce.  Then, wash and cut the tomatoes in half.  Once cool, chop the bacon into chunks.

Put the lettuce in the bowl, tomatoes on top, bacon next, then freshly grind salt and pepper over the top.  Crumble 1/4 package of the Boursin cheese over the top of the salad.  *Season the salad lightly with salt and pepper, as the Boursin cheese provides a lot of flavor.

Set the salad aside and mix olive oil, red wine vinegar, and Dijon mustard in a small bowl with a whisk.  Store the salad and dressing separately and covered in the refrigerator until ready to serve.

Once ready to serve, take out of the fridge and toss the dressing with the salad.

Modifications and Tips

I love the simplicity of this salad, but you can also make additions depending on what you have on hand.

  • 3 cups chopped romaine lettuce
  • 3 slices of cooked bacon
  • 1/4 package of garlic & herb Boursin cheese (1/4 of a 5.3 oz package)
  • 1/2 C cherry or small tomatoes, halved
